no-bake smoothie tarts (fall edition)

Are you as excited for fall as I am? For Colorful leaves, cold mornings and cozy sweaters? Then this recipe Katrin and I recently came up with might be useful for you...

 

It`s not just super yummy and easy to make but it´s also extremely healthy!

You´ll only need a few things....

> a pear                                        >walnuts (walnuts)

> half a peach                                >mini cupcake cases

> oats (3-4 Tablespoons

>9-8 dates

>plant based milk

>cinnamon (optional) 

(This makes about 7 tartes)

 

First thing you want to prepare is the dough... For this you have to start with cutting the dates into tiny pieces and mix them with 3-4 Tablespoons oats and a splash of water till everything gets a dough like consistency. (You can add some walnut chunks for some crunch and cinnamon for a more fallish flavor if you want to)

Next thing you need to do is cutting your fruit and blending it with plant based milk of your choice. The end product should be creamy and smooth and if you are unsure how much milk to use just add it in little by little...

Also you could use frozen fruit for an even creamier finish.

Now you just need to fill your cupcake cases half way with the dough, carefully add your smoothie topping and freeze them for about 15-20 minutes so they won`t fall apart straight away...

When the time is up the only thing left to do is either decorate them with nuts, fruit etc... or just enjoy them without any extra toppings which for sure is just as delicious!
